Aloo Palak Curry Recipe

Aloo Palak Curry is a healthy green vegetable recipe renowned in North India.

2 large potatoes boiled and peeled
2 large onions chopped fine
3 cups chopped spinach
1 tomato grated
2 green chillies
1″ Piece ginger
1 tsp. Lemon juice
1/2 tsp wheat or other flour
1 tsp red chilli powder
1 tsp cinnamon cove powder
1/4 tsp cumin seeds
2 pinches asafatoedia
1/2 tsp garam masala
1/2 tbsp butter
4 tbsp ghee
Salt to taste

Put the washed spinach in a pan and add a little water and a pinch of salt. Cover the pan and boil over a high flame for 2 mins. Cool quickly or hold under running water. Add green chili and Spinach in a mixer and grind coarsely. Do not make very smooth. Keep aside.
Cut the potatoes into big pieces. Add ghee in a heated pan and fry potatoes till light brown.
Drain the potatoes. Keep aside.
In the same pan add the cumin seeds to hot ghee.
Add the ginger, onions and fry till they tender.
Add the tomato and saute for two minutes.
Add all the dry masalas and fry till ghee seperates.
Add spinach and potatoes.
When it resumes to boil sprinkle the flour and stir well. Cook for 2-3 minutes.
Add lemon juice and switch off the flame. Now, heat Butter in a small pan and add the asafoetida powder.
Pour over the hot vegetables in pan and mix gently.
Serve hot with naan or Chapatis or even with plain rice.

Note:You may use boiled peas, boiled corn kernels or paneer chucks in the above dish, instead of potatoes.
